I had a minor obsession with Cafe Fanny’s granola. At $6.99 for a one-pound box, it was easily the most expensive non-alcoholic thing I bought on my grocery store trips. But I thought that granola was difficult to make, that it required a fancy dehydrator.
Hah. I was wrong.
Realizing that unemployment gave me a lot of time but not much money, I researched granola recipes until I found this one. I’ve made it a few times now, sometimes with coconut, sometimes without. I’ve used cranberries instead of raisins and always use almonds and sunflower seeds. I like to bake it a little longer than the recipe calls for to make a crunchier granola. The recipe yields almost three pounds – three times what I got from my box of Cafe Fanny granola – for a fraction of the price.
I store the granola in mason jars and give some away. What’s left is usually consumed in two weeks.

So glad it works for you! My whole family has jumped on the granola band wagon with me and I find I’m making a new batch every 2-3 weeks. Just did one 2 days ago with cranberries, pecans, and vanilla extract (Plus my other usual suspects). Good tip on cooking it longer to make it crunchier. I think I probably do that to, but haven’t adjusted the recipe to reflect that.
